I need to see two different subtotals on my invoices; one subtotal for non-taxable and service related items and one subtotal for taxable items. I cannot seem to find the right variable to use to create that additional item on my invoices. I checked out the one forum answer, but I'm still a bit mystified. I'm certainly not a genius when it comes to code-based creation.
Any suggestions?

You could create a data row area that shows the category totals, and if your taxes are tied to your categories you'll be able to simply separate and show the totals using these.
If this doesn't do the trick (or if your debt/credit categories are not specifically tied to the taxability of an item), you might want to submit a feature request for two new template variables: TaxableSubtotal, and NonTaxableSubtotal. Feature requests for Studiometry can be created here:

I'd go ahead and create it for you but there's always a chance the first suggestion will work perfectly fine for you.
I'll love you for most of the week and once a month when I look over the sales tax payout if you add this feature. :-)

Any chance the two new template variables: TaxableSubtotal, and NonTaxableSubtotal were added to Version 9?
