When I go to projects, I would like to be able to sort the project by number, ascending as well as descending.
Now, the latest project is always at the bottom of the list. I need it to be on top. Please let me know if, or when this is possible.

in v11, in the large portion of the window (right column), after choosing a client then its related projects, how do you sort by project number?

In the Client's Projects tab you can sort by ID, date, etc by clicking on the appropriate header of the table. You cannot change the sort order on the overview tab.

I want to sort by ID (the number highlighted in screengrab) but 'ID' it is not a header in the table.

Sorry about the confusion. The projects list has been cleaned up and the name/id has been combined to one column. You can modify how the combined Name & ID is formatted (which will then change how that column is sorted) within the Preferences Window > ID Numbering section. Just change Project Combined Name and ID Format to:
<id>: <name>
