Mark an estimated item as "not proceeding" or similar

I use estimated items to generate quotes directly in Studiometry which works great however sometimes clients only wish to proceed with certain work estimates. Currently this means I have to delete the estimate so that it doesn't appear in reports (such as profitability) but I would like to retain the estimated work item for future reference. An additional item mode of "archived" or "inactive" or similar would allow me to keep all estimates for reference but clearly identify to myself, staff and the client what is actually to be delivered as part of the project.

  I would also like to "Lock in" an estimate as the approved deal so it is easy to reference what was finally signed off for confident invoicing. It may already be a feature but i cannot appear to see it. Studiometry 11.1.
