I am UK based and 98% of everything is invoiced in GB£. I have a US client who I have to invoice in US$. I have updated the prefs to have £ as the default currency, but have US$ as an option for any given project.
I need to invoice a project in US$, in billable and expenses window I have selected US$ in the dropdown that now appears.
The issue I have is that whatever I do my invoice will only display £.

With currencies, you can set your project, client, work items, and invoices up to all appear in specific currencies. I'd recommend going to the Client, then selecting Client Menu > Edit Client (command-i) and then under Currency change it to USD. Next select the Project and select Project Menu > Edit Project (command-i) and go to the Billing tab, and select USD as your currency there.
Once you have the client set up to USD, all newly created projects for that client will appear in USD. When you have the project set to USD, all new work items and invoices will appear in USD.
For the invoice itself, you can change the currency it will be displayed in via the currency box highlighted in this screenshot:
